Vegan Seed Bread

Ingredients

  • 100g coconut flour
  • 150g pumpkin seeds
  • 200g dark rice flour
  • 150g sunflower seeds
  • 3 tablespoons psyllium
  • 3 tablespoons dried organic herb mixture
  • Salt & pepper
  • 600ml cold water

Preparation:

  1. Add all the dry ingredients to a large bowl then add the cold water. Mix well to create a dough.
  2. Leave the dough for about 30 minutes to absorb the water and bind the ingredients together. The dough will become completely solid.
  3. Heat the oven to 180º/200º.
  4. Put the dough into the baking tray and shape. Sprinkle with sunflower and pumpkin seeds.
  5. Bake for about an hour until the bread is coloured, and ensure the dough is cooked through to the middle of the bread.
  6. Lift the bread to cool.
  7. Enjoy!
