Spirulina Guacamole

Ingredients:

  • 1 ripe tomato
  • 2 ripe avocados
  • 1 juiced lime
  • 1 tbsp spirulina powder
  • A handful of chopped coriander
  • 1/2 small finely chopped red onion
  • 1 chilli, deseeded and finely chopped
  • Salt and pepper to taste

Method:

  1. Crush the tomato to a pulp using a large knife.
  2. Add to a bowl with the avocado flesh.
  3. Tip the rest of the ingredients (except the coriander) in and mash until you reach the desired texture.
  4. Add the coriander and mix.
  5. Enjoy!

Tip: Serve with your favourite seasoning and spread on toast for a healthy snack.
