Green Spirulina Soup

Ingredients:

  • 1 chopped onion
  • 2 crushed cloves garlic
  • 2 chopped courgettes
  • 1 potato, scrubbed & chopped
  • 1 tbsp olive oil OR 1 tbsp coconut oil
  • 1 bunch chopped fresh basil (reserve a leaf for garnish)
  • 1 tbsp spirulina powder
  • 1 vegetable stock cube diluted in 500ml water
  • Black pepper

Method:

  1. Heat the oil over medium heat.
  2. Add the onions to the pan.
  3. Stir fry for about 5 minutes, until translucent.
  4. Add the garlic, courgettes, potato, and diluted vegetable stock.
  5. Bring to the boil and cook until the vegetables are soft, adding more water if needed.
  6. Add the chopped basil and remove the pan from the heat.
  7. Transfer the soup to a blender.
  8. Season with black pepper.
  9. Finally, add the spirulina and blend.

Tip: Serve with croutons and a basil leaf for decoration.
