Shirataki Chicken Fried Rice

Ingredients:

  • 1 package shirataki rice (200g)
  • 2 tsp sesame oil
  • 2 chopped green onion stalks
  • 5 oz bean sprouts
  • 4 chopped carrots
  • 1 tbsp olive oil
  • 1 egg, lightly beaten
  • 1 shredded rotisserie chicken breast
  • 2 tbsp soy sauce

Directions:

  1. Prepare the Shirataki Rice according to package directions.
  2. Heat the sesame oil in a frying pan.
  3. Add the onion and sprouts. Stir fry for 2 minutes.
  4. Move the onion and sprouts to the outside edges of the pan.
  5. Add the olive oil and when heated, scramble the egg.
  6. Add the chicken, rice, carrots and soy sauce.
  7. Mix all the ingredients together and stir until heated through.
  8. Enjoy!
