Shrimp Stir-Fry with Shirataki Noodles
Ingredients:
- 450g shirataki noodles
- 1 tbsp coconut oil
- 225g shrimp
- 250g broccoli
- 60ml hot water
- 1 small carrot peeled & shredded
- 1 thinly sliced onion
- 3 cloves garlic finely chopped
- 1/2 tsp finely chopped fresh ginger
- 2 tbsp soy sauce (more to taste)
- 1 tbsp oyster sauce
- 1/2 tsp sugar
Instructions:
- Drain the shirataki noodles.
- Rinse them briefly with cold water.
- Preheat a medium or large pan with the coconut oil.
- Add the white part of the green onion and the garlic and ginger to the pan.
- Stir fry for about 1 minute.
- Add the broccoli and stir fry for about 2 minutes.
- Pour in the hot water and cook to let the broccoli wilt.
- Add the carrots and fry for another 30 seconds.
- Add the shrimp and stir fry until the shrimp turn pink.
- Add the rinsed shirataki noodles.
- Pour in the seasonings and stir fry to mix everything together.
- Add more soy sauce if needed. Garnish with the green part of sliced green onions.
- Serve immediately.
