Moringa Coconut Balls

Makes 15 balls

Ingredients:

Coconut filling:

  • 2 tsp moringa powder
  • 100g cashews (soaked for 1 hour)
  • 300g shredded coconut
  • 2 tbsp maple syrup
  • 4 tbsp coconut oil
  • 1 tsp vanilla extract

Raw chocolate for dipping:

  • 6 tbsp raw cacao powder
  • 6 tbsp melted coconut oil
  • 2-3 tbsp maple syrup

Method:

  1. Blend all the ingredients for the coconut filling in a blender.
  2. Use your hands to make about 15 small balls.
  3. Leave in the fridge until ready to coat in chocolate.
  4. Mix the ingredients for the chocolate coating until smooth.
  5. Dip the balls in the mixture and place onto a tray or plate lined with baking paper.
  6. Freeze for at least 30 minutes before eating.
  7. Store in the fridge.
  8. Enjoy!
