Hemp Protein Pancakes

Ingredients:

  • 240ml unsweetened almond milk OR coconut milk
  • 3 tbsp flaxseed
  • 1 tbsp Coconut Oil
  • 1/2 tsp vanilla extract
  • 70g Hemp Protein Powder
  • 70g whole grain flour
  • 1/2 tsp baking powder
  • A pinch of cinnamon
  • A small amount of coconut oil for frying

Preparation:

  1. Preheat a frying pan to about 360 degrees.
  2. In a bowl, whisk together the milk, flaxseed and coconut oil.
  3. In a separate bowl, whisk the hemp protein powder, flour, baking powder, and cinnamon.
  4. Add the two mixtures and mix well to create a smooth consistency.
  5. Melt some oil on the pan.
  6. Scoop some batter onto the preheated pan. The amount is up to the size you like your pancakes!
  7. Cook until the pancake is brown on one side, then flip over to brown the other side.
  8. Leave to cool for a few minutes before serving.
  9. Enjoy!

Serving Tip: Decorate with blueberries and cocoa nibs, or your own favourite healthy toppings.
