Colourful Shirataki Noodle Salad with Shrimp

Ingredients:

For the dressing:

  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 2 tsp toasted sesame oil
  • 2 tsp gochugaru or red pepper flakes
  • 2 tsp sesame seeds, toasted
  • 2 cloves garlic, chopped
  • 1 tsp honey
  • 1 green onion, finely sliced

For the salad:

  • 1 pack Shirataki Noodles (200g), drained & rinsed
  • 230g cooked shrimp, peeled & chilled
  • 800g shredded lettuce
  • 200g cucumber, sliced
  • 200g carrot, sliced
  • 200g shredded red cabbage
  • 1 yellow pepper, sliced
  • 50g green onion, sliced

Directions:

For the dressing:

  1. Mix all ingredients together.

For the salad:

  1. Fry the noodles for 5-8 minutes.
  2. Assemble, toss in the dressing and enjoy!
