Colourful Shirataki Noodle Salad with Shrimp

Ingredients:
For the dressing:
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 2 tsp toasted sesame oil
- 2 tsp gochugaru or red pepper flakes
- 2 tsp sesame seeds, toasted
- 2 cloves garlic, chopped
- 1 tsp honey
- 1 green onion, finely sliced
For the salad:
- 1 pack Shirataki Noodles (200g), drained & rinsed
- 230g cooked shrimp, peeled & chilled
- 800g shredded lettuce
- 200g cucumber, sliced
- 200g carrot, sliced
- 200g shredded red cabbage
- 1 yellow pepper, sliced
- 50g green onion, sliced
Directions:
For the dressing:
- Mix all ingredients together.
For the salad:
- Fry the noodles for 5-8 minutes.
- Assemble, toss in the dressing and enjoy!
