Mediterranean Cauliflower Couscous

Everyone loves couscous, a delicious nutritious treat. Check out our healthy couscous recipe, made with cauliflower.

Mediterranean cauliflower couscous (cherry tomatoes, taggiasche olives and basil)

Ingredients:

  • 1 small cauliflower
  • 300g of colorful tomatoes
  • 40g of Taggiasca olives
  • Extra virgin olive oil (to taste)
  • Fresh basil

Preparation:

  1. In a food processor, blend the cauliflower until it is as small as the couscous, and pour into a bowl.
  2. Chop the tomatoes into four parts and add to the bowl, afterwards, place in the taggiasca olives and season with olive oil. Serve with a few leaves of fresh basil.
