Gluten-Free Coconut Sugar Cookies

Ingredients:

  • 100g melted butter
  • 200g coconut sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 350g gluten-free flour
  • 400g chocolate chunks

Directions:

  1. In a large bowl, whisk the melted better with coconut sugar.
  2. Add the eggs, then stir in the vanilla extract.
  3. Add in the baking soda, salt, flour, and stir with a wooden spoon until smooth and no flour remains visible.
  4. Stir in the chocolate chunks.
  5. Shape into flat discs and place on a baking tray.
  6. Bake at 375ºC for about 9 minutes or until golden.
  7. Leave to cool and store in an airtight container.
