Carrot Pancakes

Ingredients:

  • 2 Carrots
  • 100ml Hummus
  • 2 Eggs
  • 1-2 teaspoons Chia Seeds (depending on your preference)
  • A pinch of Sea Salt
  • Coconut Oil for frying

Preparation:

  1. Peel and chop the carrots.
  2. Mix all the ingredients in the blender.
  3. Let the dough sit for about 15-20 minutes.
  4. Fry the pancakes in coconut oil until golden.
  5. Enjoy!
