Shirataki Noodles with Butter Sauce and Almonds

Ingredients:

  • 1 tablespoon mild olive oil or coconut oil
  • 2 clove garlic, grated
  • 3 spring onions in cubes
  • 100g broccoli
  • 1 small carrot, cut into small rods
  • 1⁄4 cabbage head, shredded
  • 1 pack of Shirataki noodles
  • 1 tablespoon almond butter
  • 1 or 2 tsp sriracha sauce, depending on taste
  • 2 tablespoons Coconut amino

Preparation:

  1. Heat the olive oil in a wok or large skillet with medium heat, and add the garlic and spring onion.
  2. Let it fry for a few minutes until tender and then add the rest of the vegetables.
  3. While the vegetables are roasting, prepare the noodles by taking them out of the packet and rinsing them well in warm water.
  4. Add them to the vegetables in the pan, and cook as directed on the packet.
  5. When nearly cooked, add the almond butter, sriracha sauce and coconut amino.
  6. Mix it well with the vegetables and noodles to make a sauce and let it warm.
  7. Serve and enjoy the meal!

Tip: Use the vegetables you like. Mushrooms and peppers also work well.
