Shirataki Noodles with Butter Sauce and Almonds

Ingredients:
- 1 tablespoon mild olive oil or coconut oil
- 2 clove garlic, grated
- 3 spring onions in cubes
- 100g broccoli
- 1 small carrot, cut into small rods
- 1⁄4 cabbage head, shredded
- 1 pack of Shirataki noodles
- 1 tablespoon almond butter
- 1 or 2 tsp sriracha sauce, depending on taste
- 2 tablespoons Coconut amino
Preparation:
- Heat the olive oil in a wok or large skillet with medium heat, and add the garlic and spring onion.
- Let it fry for a few minutes until tender and then add the rest of the vegetables.
- While the vegetables are roasting, prepare the noodles by taking them out of the packet and rinsing them well in warm water.
- Add them to the vegetables in the pan, and cook as directed on the packet.
- When nearly cooked, add the almond butter, sriracha sauce and coconut amino.
- Mix it well with the vegetables and noodles to make a sauce and let it warm.
- Serve and enjoy the meal!
Tip: Use the vegetables you like. Mushrooms and peppers also work well.
