Potato Pancakes

Ingredients:

  • 150g boiled potatoes
  • 3 tablespoons white flour
  • 2 eggs
  • 2 tablespoons Parmesan cheese
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Fresh herbs to taste (e.g parsley)

Preparation:

  1. Mash the potatoes until they are pureed.
  2. Add the flour and eggs and mix together.
  3. Add the other ingredients and continue to mix with a whisk to obtain a homogeneous mixture.
  4. Heat a non-stick pan and pour in two tablespoons of the dough.
  5. Let each pancake cook until some bubbles appear on the surface, then turn it and finish cooking for about 30 seconds.
  6. Stack the pancakes on top of each other to keep them warm.
  7. Serve and enjoy!
