Acai Peppermint Chocolate Mousse
Ingredients :
- 1 box of Coconut Cream (400ml)
- 200g Dark Chocolate coarsely chopped
- 1 tsp Acai Powder
- 1/2 teaspoon Pure Peppermint Extract
Preparation:
- Over boiling water, melt chocolate until creamy and smooth.
- In a large bowl, whisk coconut cream and melted chocolate.
- Add peppermint extract and Acai powder and mix again.
- Cover and place the mixture in the refrigerator for approx. 2 hours. You know it is ready to whip when the mixture no longer moves from side to side.
- At this time you can either transfer to a pipe sack or, use a spoon to share between 3-4 small bowls.
- Serve with fresh mint leaves and favourite berries. Enjoy!
